Did you know that pumpkins are not only for carving but also for eating too? Sn Autumn upon us and we are so excited to share that our Goan Pumpkin Curry is back on the menu for the month of October. Not only is it super delicious and healthy, it’s also VEGAN!
Pumpkins are packed with nutrients including Vitamin C and Vitamin E, as well as beta-carotene which all play an important role in the health and functioning of our bodies. Vitamin C and E are great for skin health as Vitamin C contributes to the formation of collagen, while Vitamin E is a great antioxidant. Pumpkins may also support eye health and boost your immune system too. Win Win!
What are the ingredients?
A moreish nut based curry with a mix of delicious, fresh seasonal pumpkin, coconut milk, cashew nuts, tomatoes, mustard seeds, fennel and fenugreek. You can make it as spicy or mild as you like as this dish can be made to your taste (mild, medium or hot).
