If like me, you stuggle to come up with inspiring dinners night after night, why not try spicing up your Bombay Tikka Masala sauce with this simple recipe that can be on the table in minutes! Read on if you would like to try your hand at making a Chicken Tikka Mirchi!
What you need:
- 2 chicken breasts, diced
- 10g fresh ginger, chopped
- ½ red onion, sliced
- ½ red pepper, sliced
- ½ green pepper, sliced
- Fresh green chillies, chopped (to taste)
- 1 pot of Bombay Pantry Tikka Masala Sauce
- A handful of fresh coriander to garnish
Start with the ginger and green chillies; stir fry in a little oil (we use Rapseed oil but that’s up to you). Depending on how hot you want the dish, load up on the green chillies! About 3-4 minutes will do.
Add the chicken and cook until golden.
Then add in the sliced red onion and mixed peppers and cook until soft
Once these are all to the texture that you prefer (we like ours with a little bite) then take your Bombay Tikka Masala sauce and pour in and bring to a gentle simmer.
Once the chicken is cooked through, you are ready to serve!
Garnish with fresh coriander and serve with some fluffy Bombay Pantry Pulao Rice.
Couple of tips!
Marinade your meat in some fresh ginger and garlic paste (mix crushed ginger and garlic with vegetable oil to create a paste); it gives a delicious flavour.
If you plan on cooking a lot of Indian, then handy to have a pot of fresh coriander growing so it is always available.
